Cheese - There are an assortment of suppliers I use to provide me with Award Winning Hand Crafted Artisan Cheeses to use in my dishes and for cheese plates. Depending on the type of cheese I am looking for, dictates which supplier I buy from. If all offer the same product I want with the same quality, I choose the one that is more economical for my client.
Butter - Everything tastes better with butter. As a chef, we tend to be less conscious about the fat content that is going in our dishes and more focused on introducing the best product with the best flavor. I obviously don't desire or plan menus to serve my clients a 5 course meal all loaded with rich cream, cheeses and butter, but if there are 1 or 2 dishes that cause for a butter, I prefer to use the best there is. There are 2 butters I use in my dishes: Plugra is a European Style butter that far surpasses any other in the world. They have it down to a science and there is a real difference to see in Plugra when compared to regular store brands that more tend to only introduce a texture and an oily flavor. The other is Falfurria's. Falfurria's Butter comes from the heart of Texas where they practice orginal timeless traditions of churning out their near perfect old fashioned butter that melts in your mouth.
Desserts - I must admit that my passion for food and cooking is solely based on real savory food and serving those types of dishes. My pastry and dessert skills outside my Bread Pudding, Root beer Float, and Crema Catalana, are pretty much non existent. That is why I leave it up to the experts to provide me with gourmet desserts. I have searched high and low looking for the best of the best tasting pastries, cakes, cheesecakes, pies, ice creams, gelatos, individual desserts, and other unique sweet items from vendors all over the country. I believe I have found the type of vendors and products I am looking for to satisfy my client's sweet tooth and compliment the end of one of my meals. However, specialty items and items not listed on the menu page are more than welcome to be requested by the client to be purchased for their event.
