Fresh Fish -
My fish monger is located off the Northeast Atlantic Coast. The buyers at Wild Edibles search the world over in their quest to obtain the finest quality product as well as unique products to offer their customers. Wild Edibles deals directly with suppliers throughout the world and have the fresh seafood flown in straight off the boat. This practice not only assures them of unsurpassed product freshness and quality, but also allows them to offer an exceptional variety of selections. Wild Edibles offers an extensive list of fresh fish: Sushi Grade Ahi Tuna, Swordfish, Grouper, Various Wild Salmons, Mako Shark, Escolar, Wild Striped Bass, Chilean Sea Bass, Monkfish, Mahi Mahi, Red Snapper, and Lemon Sole.

Shellfish - Most of my shellfish such as Crab, Shrimp, Oysters, Softshell Crab, and Crawfish come straight from local family owned businesses right here in SWLA.
JT's provides my Crab Meat, Shrimp, and the occasional Crawfish Tails. My Oysters come from Doxie's in Cameron, LA. I never purchase or use Foreign Shrimp, Crab, or Crawfish in any of my dishes.

Since other varieties of shellfish are not locally available, I use Wild Edibles to supply me with Scallops, Clams, Mussels, most Lobsters, and Caviar if requested.
