My clients have been more than satisfied with the size, texture, and flavor of this Coturnix Quail. The Coturnix Quail is a larger and more flavorful bird than the popular Bob White and is harvested when it reaches its peak maturity. The Diamond H Ranch offers their quail in several ways: Whole, Semi Boneless, Quail Breasts, and the popular Quail Legs. My signature items using these quail are Siriachi Spiked Buffalo Style Quail Legs and Buttermilk Fried Whole Quail. This is a very versatile and flavorful product

Maple Leaf Farms provides a farm-raised White Pekin duck that yields a consistent, high quality, less fatty product. The ducks are fed a natural, grain-based diet that does not include any antibiotics, hormones or other growth promo ants. In addition, the ducks are cared for by a staff that is trained and certified concerning animal husbandry and well being issues. The result of this process is a tender, mild meat that adapts to a wide range of flavor profiles and cuisines.
Hudson Valley Foie Gras is dominantly a provider of America's Best Foie Gras, but also offers a superior Duck Meat Product. HVFG offers Duck Breasts, Duck Legs, Duck Confit, Duck Breasts, Duck Pastrami and Prosciutto, Smoked Duck Breasts, and various forms of Foie Gras, Pates, and Terrines. HVFG provides a larger Moulard Duck Breast with a thicker fat cap, and in my opinion a better flavor.
